As someone who has enjoyed Tom's bagels on a number of occasions and who has been lucky enough to try various bagels in NYC over the years, I can honestly say Tom's are hands-down the best!

But I'm about ready to do some more cooking. On a side note, did you know that Friday would have been my 8th year at MP had MP stayed around? EIGHT years! I only planned on being there for 2.

Love this post! And I’ll be making these bagels - I’ve got a dormant starter I made from wild yeasts from my back garden (an experiment/labour of love in May) which I’ll revive especially for this - never made bagels (mostly loafs) so this recipe is perfect! Great photos, too - and I think your levain looks great - and I’m sure it smells nice and sour.
I totally agree about recipe blogs with annoying stories at the beginning! It’s truly my pet peeve, which is why I love that you shared the recipe first and the rest was completely worth reading every word. Totally delicious looking bagels. It’s a cooking feat I have never accomplished so this was inspiring. Thank you!
Ha, nice to run into someone else who hates having to wade through a bunch of BS in order to get to the recipe. One exception I've made is for Edward Giobbi and his excellent cookbook and more, "Pleasures of the Good Earth." Always wanted to give his raccoon Cacciatore a try.
I liked your story and would like to make this recipe, however..........What if you don't have a sourdough starter? Can you use a poolish or instant yeast?
